Ethiopia Halo Beriti Carbonic Maceration
A truly beautiful coffee, this lot was produced by Boledu Coffee in the Halo Beriti water mill.
Halo Beriti is one of Ethiopia’s most famous microlot brands and also a station where a lot of experimentation takes place.
This lot was fermented in a very similar style to wine, in a closed tank from which the oxygen was removed and then pressurized with carbon dioxide.
Thanks to the fermentation process, you can find a lot of fruit on the palate such as mango, citrus and tropical fruits with high sweetness and sparkling acidity.
The floral notes are more vivid in the aftertaste, which leaves a lingering taste of red wine and violets in your mouth.
